San Sebastian Cheesecake Recipe

Ingredients

500 g Muratbey Sürmeli cheese
400 ml (2 water glasses / about 1¾ cups) heavy cream
4 eggs
1½ water glasses (about 1¼ cups) sugar
2 tablespoons flour
1 packet vanilla

Instructions

Combine the Muratbey Sürmeli cheese and sugar in a large bowl and mix with a hand or stand mixer. Continue mixing until the cheese is completely smooth. Add the room-temperature eggs one at a time, continuing to beat after each addition. Add the heavy cream, vanilla, and flour in order, beating after each addition. Continue using the mixer until you achieve a smooth, homogeneous batter with all ingredients evenly incorporated. Line a medium-sized springform cake pan with parchment paper so that it overhangs the sides, lightly grease the paper all over, then pour in the batter. Bake your cheesecake in a preheated oven at 190°C (375°F) for approximately one hour.

Once baking is complete, do not remove the cheesecake from the oven. Leave the oven door slightly ajar and allow the cake to rest for half an hour.

Remove the cheesecake from the oven and let it sit at room temperature for about one hour, then transfer it to the refrigerator. Chill for at least five hours — you can extend this up to a full day.
