Ingredients for Spinach Kol Böreği (Spinach Roll Börek)

  • 1 kg (about 2 lb) spinach
  • 5 sheets yufka (thin Turkish phyllo-like dough)
  • 1 onion
  • Half a tea glass (about 50 ml / 3 tbsp) + half a water glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • Half a dessert spoon (about 1 tsp) salt
  • 2 eggs
  • 1.5 water glasses (about 300 ml / 1¼ cups) yogurt
  • 2 water glasses (about 400 ml / 1⅔ cups) water
  • Nigella seeds

How to Make Spinach Kol Böreği (Spinach Roll Börek)

Pick over, wash, and chop 1 kg (about 2 lb) of spinach. In a pot, sauté 1 finely diced onion in half a tea glass (about 50 ml / 3 tbsp) of vegetable oil. Add the chopped spinach on top. Stir in 1 teaspoon of red pepper flakes, 1 teaspoon of black pepper, and half a dessert spoon (about 1 tsp) of salt. Once the spinach softens, crack 2 eggs over it, stir, and remove from heat once cooked.

In a bowl, beat 2 eggs with 1.5 water glasses (about 300 ml / 1¼ cups) of yogurt. Add half a water glass (about 100 ml / 1/3 cup + 1 tbsp) of vegetable oil and 2 water glasses (about 400 ml / 1⅔ cups) of water, and mix everything together.

Lay one full sheet of yufka (thin Turkish phyllo-like dough) flat on the counter. Drizzle the prepared oil sauce over it. Place some of the spinach filling along one edge and roll the entire sheet up tightly into a log. Transfer to a greased baking tray, starting from the center and coiling it around to form a rose shape (as shown in the photo). Prepare the remaining 4 sheets of yufka in the same way, continuing to wrap them around the rose shape you started in the center. Pour the remaining sauce over the assembled börek, sprinkle with nigella seeds, and bake in a 200°C (390°F) oven until golden brown.
