Ingredients for Baked Sütlaç (Turkish Rice Pudding)

  • 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) rice
  • 2 tea glasses + 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) water
  • 1 liter (about 4 1/4 cups) milk
  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) granulated sugar
  • 1 tablespoon wheat starch
  • 2 egg yolks
  • 1 packet vanilla

How to Make Baked Sütlaç (Turkish Rice Pudding)

Place 1 tea glass of cleaned and washed rice into a pot with 2 tea glasses of water and cook over low heat until the water is absorbed, then remove from the heat.

In a pot, combine 1 liter of milk and 1 water glass of granulated sugar, stir, and bring to a boil. Add the cooked rice and cook for 10 minutes.

In a bowl, whisk together 1 tablespoon of wheat starch and 2 egg yolks. Ladle some of the hot milk from the pot into the bowl to temper the starch mixture. Gradually pour it back into the milk pot. Stir once or twice, then remove from the heat. Add 1 packet of vanilla, stir to combine, and divide the mixture among individual clay or oven-safe ramekins. Arrange the ramekins on a baking tray and pour 2 water glasses of water into the tray. Bake in a 200°C (400°F) oven until the tops are golden brown. *If your oven has a top broil setting, the result will be even more delicious.
