How to Make Eggs in Tomato Cups with Sucuk (Turkish Spiced Beef Sausage)
Slice 12 pieces of sucuk (Turkish spiced beef sausage) into a pan. Add 1 dessert spoon (about 2 tsp) of vegetable oil and fry the sucuk. Cut the tomatoes into slices about 2 fingers thick, scoop out the insides, and nestle them between the sucuk pieces. Crack one egg into each tomato cup. Sprinkle a very small amount of salt over the eggs. Cover with a lid and cook until the egg whites are set.
About This Recipe
The tomato — with its fuzzy leaves and clustered blossoms — is that wonderfully fragrant plant that greets us most often in red, and sometimes in green.
We've jotted down some little-known facts about this beautiful member of the nightshade family. Here they are:
*Scientists have proven that tomatoes have more genes than humans.
*Tomatoes are very low in calories and, thanks to their filling effect, are a staple of many diets. There are only 19 calories in 100 g of tomato.
*In 1893, a U.S. court ruling officially classified it as a vegetable. Until then it was known as a fruit — and technically, it still is one.
*Until the mid-16th century, tomatoes were believed to be poisonous and were not consumed. Even when they were found to be safe years later, people only ate them boiled or fried. It wasn't until 1700 that a Florentine chef chopped one raw into a salad — and that's when eating tomatoes fresh really took off.
*Centuries ago, the first wild tomatoes discovered in Bolivia and Peru were yellow. Perhaps for this very reason, Italians long called the tomato "golden apple."
*Research conducted by experts has shown that tomatoes are many times more beneficial for our eyes than carrots.
*They protect the skin and slow down aging.
*They help lower bad cholesterol.
*They strengthen our sense of taste.
*They are good for the treatment of rheumatic pain.
*The compounds they contain help strengthen the immune system.
*Their antioxidant content — vitamins A, C, and E — helps reduce the risk of cancer.
*If your skin is oily and prone to acne, massage your face with tomato slices for about 10 minutes, then rinse with lukewarm water.
*A note from home: Our tomato beauty, Ayşen Gruda… We remember her here with respect and fondness.
