Ingredients for Kağıt Helva Cake (Paper Halva Layer Cake)
- 3 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) milk
- 1/2 water glass (about 100 ml / 1/3 cup + 1 tbsp) granulated sugar
- 100 g heavy cream
- 3 egg yolks
- 2 tablespoons cornstarch
- 2 tablespoons flour
- 2 tablespoons cocoa powder
- 1 water glass milk
- 1 packet whipped cream powder (krem şanti)
- 3 sheets (3 pieces) kağıt helva (paper halva)
How to Make Kağıt Helva Cake (Paper Halva Layer Cake)
Pour 2 water glasses of milk into a saucepan. Add 1/2 water glass of granulated sugar and 100 g of heavy cream, then warm over low heat.
In a bowl, combine 3 egg yolks, 2 tablespoons of cornstarch, and 2 tablespoons of flour. Slowly add 4 tablespoons of the warmed milk mixture and whisk together with a hand mixer. Pour this flour mixture back into the saucepan and stir to combine. Add 2 tablespoons of cocoa powder and cook, whisking continuously with a hand mixer, until thickened.
In a separate bowl, whisk together 1 water glass of milk and 1 packet of whipped cream powder until stiff peaks form.
Place 1 sheet of kağıt helva (paper halva) on a serving plate. Spread the chocolate cream evenly over it using a spatula. Repeat this process for 3 layers. Cover the top and sides of the cake completely with the prepared whipped cream using a spatula. Dust cocoa powder over the top. Refrigerate to rest before serving.
