  • 1 kg (about 2 lb) milk
  • 3 tablespoons flour
  • 2 tablespoons cocoa
  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) granulated sugar
  • Hazelnuts, for topping

How to Make Chocolate Muhallebi (Turkish Milk Pudding with Cocoa)

  • In a saucepan, whisk together 1 kg milk, 3 tablespoons starch, 2 tablespoons flour, 2 tablespoons cocoa, and 1 water glass of granulated sugar.
  •  Then turn on the heat and cook, stirring continuously, until the mixture reaches a pudding consistency, and remove from heat. 
  • Pour the cooked chocolate muhallebi (Turkish milk pudding) into a glass dish. Once it cools to room temperature, place it in the refrigerator and let it chill until cold.
  • Once chilled, sprinkle hazelnuts on top and serve. Enjoy! 

Pro Tips

  • If you blend the sugar, cocoa, flour, and starch dry in the saucepan before adding the milk, you will minimize the risk of lumps when the milk is added.

  • Stirring in a dessert spoon (about 2 tsp) of butter after your pudding has finished cooking will give your dessert a wonderful glossy finish and a silky texture.

  • Beating the cooked pudding with a hand mixer for 3–4 minutes after removing it from the heat will help you achieve an extra smooth consistency.
