Ingredients for Mushroom and Green Lentil Salad

  • 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) green lentils
  • 1 onion
  • 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
  • 10 button mushrooms
  • 1 clove garlic
  • 1/2 dessert spoon (about 1 tsp) salt
  • 1/2 dessert spoon (about 1 tsp) Aleppo pepper flakes
  • 2 red peppers
  • 1 handful parsley
  • 1/2 lemon

How to Make Mushroom and Green Lentil Salad

  1. Sort and rinse 2 water glasses of green lentils, lightly boil them, then drain. Transfer to a serving plate.
  2. In a pan, sauté 1 finely diced onion in 1 tea glass of vegetable oil. Add 10 washed and thinly sliced button mushrooms on top of the onions. Add 1 finely chopped garlic clove. Season with 1/2 dessert spoon of salt and 1/2 dessert spoon of Aleppo pepper flakes, then sauté the mushrooms until fully cooked.
  3. Spoon the sautéed mushrooms over the lentils on the serving plate. Wash 2 red peppers and char them over an open flame or grill. Once charred, peel the skins and remove the seeds. Slice them into thin julienne strips and place on top of the mushrooms. Chop 1 handful of parsley over the top, squeeze half a lemon, and toss everything together.
