- 1 kg (about 2 lbs) eggplant
- 4 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) granulated sugar
- 5 water glasses water
- 1 teaspoon citric acid
- Half a cinnamon stick
- 2 cloves
How to Make Eggplant Jam (Patlıcan Reçeli)
Peel 1 kg (about 2 lbs) of eggplant and place them in a container filled with water to draw out the bitter liquid. Let them soak in the refrigerator in the water-filled container for about 2–3 hours. Add a little water and 1 teaspoon of citric acid to a saucepan. Once boiling, add the peeled and chopped eggplant. Boil on low heat for about 15 minutes, then remove the eggplant from the boiling water. Rinse the eggplant in cold water, then squeeze out the excess liquid.
In a saucepan, bring 4 water glasses of granulated sugar, half a cinnamon stick, 2 cloves, and 5 water glasses of water to a boil. Add the squeezed eggplant and cook until the mixture reaches a jam consistency. Once cooked, remove the cinnamon stick and cloves.
