Ingredients for Green Fig Jam (Yeşil İncir Reçeli)

  • 1 kg (about 2 lbs) green unripe figs
  • 1 kg (about 2 lbs) granulated sugar
  • 4 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) water
  • 1/2 lemon
  • 4 whole dried cloves

How to Make Green Fig Jam (Yeşil İncir Reçeli)

After peeling 1 kg (about 2 lbs) of green figs, boil them in plenty of water for approximately 15 minutes. Remove the cooked figs from the water with a slotted spoon. Rinse them thoroughly under plenty of water several times. Then let them soak in cold water — preferably ice water. Squeeze the figs after removing them from the cold water to drain out the bitter liquid.

In a pot, combine 1 kg (about 2 lbs) of granulated sugar and 4 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) of water and bring to a boil. Once boiling, add 4 whole cloves and 1 kg (about 2 lbs) of unripe figs. Cook for about 20–25 minutes, stirring, until the mixture reaches a jam-like consistency. Finally, add the juice of half a lemon and cook over low heat for about 5 more minutes. Remove from the heat and, once the jam has cooled to lukewarm, transfer it into glass jars. Seal the jars and turn them upside down. Make sure the jam has cooled sufficiently before sealing — closing the lids while the jam is still hot can create steam inside, causing the jam to spoil.

The fig is a beautiful fruit with countless health benefits. 

Fig trees can grow between 3 and 9 meters (10–30 ft) tall. Although uncommon, some have been recorded reaching up to 15 meters (nearly 50 ft). Their roots are generally found close to the soil surface, yet they can also develop very deep root systems — the deepest recorded root reached 120 meters (nearly 400 ft) underground. The fig fruit contains an inverted flower that blooms inside the fleshy structure and is not visible from the outside. Figs are pollinated by a specialized species of wasp that enters through a small opening. Various animals also eat figs and disperse their seeds through their droppings. Figs are grouped into four categories based on flower type and reproductive method. Only one type, known as the caprifig, produces pollen, while the other three types depend on it.

Consuming figs in excess may cause diarrhea. In some individuals, they may also trigger allergic reactions. Additionally, those who regularly take medication to control blood sugar should consult their doctor before consuming figs.
