  • 4 handfuls şehriye (Turkish orzo / tiny pasta)
  • 4 tablespoons yogurt
  • 1 dessert spoon (about 2 tsp) salt
  • 1 tablespoon flour
  • 1 egg
  • 1 teaspoon mint

How to Make Yogurt Soup with Şehriye (Turkish Orzo)

Add water to a soup pot and once it comes to a boil, add 1 dessert spoon (about 2 tsp) of salt and 4 handfuls of şehriye (Turkish orzo). Once the pasta is cooked, whisk together 4 tablespoons of yogurt, 1 tablespoon of flour, 1 egg, and 1 teaspoon of mint in a bowl. Gradually add some of the hot soup broth to this mixture to temper it, then slowly stir it into the soup and bring to a brief boil. When serving, garnish with mint. Enjoy your meal...

Although the exact date is not precisely known, the word "yogurt" — with its modern meaning — is known to appear in the Dīwān Lughāt al-Turk, written by Kashgari Mahmud in the 10th century. The earliest records of its spread to Europe are found in French medical history. In the 15th century, King Francis I of France fell ill with severe dysentery.
