Ingredients for Anchor-Shaped Pastry Rolls with Sucuk (Sucuklu Çapa Poğaçası)
- 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) yogurt
- 1 egg
- 1 egg yolk and white (for brushing)
- 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
- 2 tablespoons margarine
- 1 dessert spoon (about 2 tsp) salt
- Flour, as much as needed
- 1 packet baking powder
- Sucuk (Turkish spiced beef sausage), as desired
How to Make Anchor-Shaped Pastry Rolls with Sucuk (Sucuklu Çapa Poğaçası)
In a bowl, knead together 1 water glass of yogurt, 1 egg, 1 egg white, 1 tea glass of vegetable oil, 2 tablespoons of margarine, 1 dessert spoon of salt, flour as needed, and 1 packet of baking powder until the dough no longer sticks to your hands. Pull off tangerine-sized pieces of dough and roll them out into rounds on a work surface. Without touching the center, make 6 cuts around the edges with a knife. Place finely chopped sucuk in the center, then fold one cut flap over the sucuk. Leave the next flap open, and fold the following flap over the sucuk. Leave the next one open again, and fold the last flap over the sucuk. Arrange on a parchment-lined baking tray, brush the tops with egg yolk, and bake at 200°C (390°F).
