Ingredients for Pizza Poğaça (Turkish Pizza Rolls)

  • 150 g white cheese (similar to feta)
  • 1.5 dessert spoons (about 3 tsp) oregano
  • 1 teaspoon + half a tea glass (about 50 ml / 3 tbsp + 1 tsp) vegetable oil
  • 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) milk
  • 10 g dry yeast
  • 1 tablespoon granulated sugar
  • 50 g butter
  • 2 eggs + 1 egg yolk
  • 1 dessert spoon (about 2 tsp) salt
  • Flour, as much as needed
  • Cherry tomatoes
  • Long green peppers

How to Make Pizza Poğaça (Turkish Pizza Rolls)

  • In a bowl, crumble 150 g white cheese (similar to feta) and mix with 1.5 dessert spoons (about 3 tsp) of oregano and 1 teaspoon of vegetable oil.
  • In a separate bowl, combine 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) of milk, 10 g dry yeast, 1 tablespoon of granulated sugar, 50 g butter, half a tea glass (about 50 ml / 3 tbsp + 1 tsp) of vegetable oil, 2 eggs, 1 dessert spoon (about 2 tsp) of salt, and as much flour as needed, then knead the dough. Cover the bowl with plastic wrap and let it rest for 1 hour.
  • Transfer the rested dough to a lightly floured surface and knead again. Pinch off pieces of dough roughly the size of a mandarin orange, and shape each piece by hand into a small cup on the surface. Place some of the prepared white cheese and oregano filling inside and press the sides together to seal.
  • Arrange the rolls on a baking tray lined with parchment paper. Top each one with half a cherry tomato and a finger-sized piece of long green pepper, then let them rest for another 20 minutes. After resting, brush with egg yolk and bake in a preheated oven at 190°C (375°F) until golden brown. Enjoy!

Tips & Tricks

  • Your milk and any liquid must be lukewarm — warm enough that it won't burn your finger. Cold liquid won't activate the yeast, while liquid that's too hot will kill it.
  • The 1 tablespoon of sugar added to the dough isn't just for flavor; it's essential for feeding the yeast so it makes the dough rise beautifully.
  • After shaping, if you let the rolls rest on the tray for at least 15–20 minutes, they will rise twice as well in the oven.
  • Once out of the oven, cover the rolls with a slightly damp cloth and let them rest for 5 minutes — this will keep your poğaça perfectly soft and pillowy.
