Ingredients for Artichoke and Borlotti Bean Salad

  • 3 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) cooked borlotti beans
  • 3 artichokes
  • 1 dry onion
  • 1 red pepper
  • 1 handful parsley
  • 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
  • 1 lemon
  • Salt

How to Make Artichoke and Borlotti Bean Salad

Boil 3 artichokes in salted, lemon-infused water in a pot. Once drained, transfer the artichokes to a bowl and dice them into cubes, then drain the cooked borlotti beans and pour them over the artichokes. Finely dice 1 onion and 1 red pepper and add them on top. Chop 1 handful of parsley, then squeeze 1 lemon over the salad. Add 1 tea glass of vegetable oil and salt, then toss the entire mixture together and serve on a salad plate. Enjoy!...
