Ingredients for Wheat and Dried Borlotti Bean Soup
- 2 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) wheat berries
- 1 water glass dried borlotti beans
- 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil
- 1 onion
- 1 dessert spoon (about 2 tsp) salt
- Red pepper flakes
- Mint
How to Make Wheat and Dried Borlotti Bean Soup
The day before, soak 2 water glasses of wheat berries and 1 water glass of dried borlotti beans. The next day, boil them together, then drain. In a pot, sauté 1 large onion, diced, in 1 tea glass of vegetable oil. Add the boiled wheat berries and borlotti beans, cover with water, sprinkle in 1 dessert spoon of salt, and cook until done. When serving, sprinkle red pepper flakes and mint on top. (You can also serve with vinegar — it will be quite delicious.)

Wheat is an annual herbaceous plant from the grass family that has been cultivated all over the world. Wheat prefers a continental climate. Together with corn, it is the second most widely cultivated grain in the world, followed by rice. Wheat is a staple raw material used in the production of flour and animal feed. It can be milled with or without its husk. The number of known wheat varieties identified worldwide to date is around three thousand, with more than five hundred varieties found in Turkey alone. In our country, it is widely grown in almost every region — primarily as soft and hard wheat — except for the high plateaus of the Eastern Black Sea and Eastern Anatolia. The Southern and Eastern Anatolia regions account for 60% of total wheat production. Hard wheat is grown for pasta, while other wheats are grown for bread. The size of wheat varies depending on its variety.
The height of wheat generally reaches 60–120 centimeters. At the top of the wheat head, there is a spike containing approximately 50 wheat kernels. The color of wheat can be red, blue, purple, brown, or white depending on the variety. The kernel consists of three parts: bran (the outer layer), endosperm (the nutrient store used in embryo development), and germ (the embryo). Whole wheat flour is produced by milling all parts of the kernel. The production of white flour, on the other hand, requires the removal of the bran and germ. This type of flour contains far fewer minerals, fiber, and vitamins compared to whole wheat flour. Whatever the variety, wheat is always divided into two main groups: spring wheat and winter wheat. Spring wheat is planted in spring and harvested throughout summer. Winter wheat is planted in autumn and harvested in spring. Wheat is ready for harvest when the grains turn golden and dry out. Wheat contains a very high proportion of protein, sugars (as starch), all B-group vitamins, and minerals such as iron, manganese, magnesium, and zinc.
