Ingredients for Pear Dessert with Caramel Sauce (Armut Tatlısı)

  • 4 large pears
  • 3 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) water
  • 1 water glass + 3 tablespoons granulated sugar
  • 2–3 drops lemon juice
  • 2 tablespoons water
  • 2 drops lemon juice
  • 1 tablespoon butter
  • Half a package of heavy cream

How to Make Pear Dessert with Caramel Sauce (Armut Tatlısı)

  1. Peel the 4 large washed pears, leaving their stems intact. Cut the bottoms flat so they can stand upright. Using a melon baller or corer, remove the seeds from the bottom center. In a saucepan, combine 3 water glasses of water, 3 tablespoons of granulated sugar, and 2–3 drops of lemon juice, and stir briefly. Once the sugar dissolves, place the pears in the pot and cook on low heat with the lid on until a fork can be inserted easily. Once cooked, transfer to a serving plate using a slotted spoon and let cool.
  2. For the caramel sauce: Place 1 water glass of granulated sugar, 2 tablespoons of water, and 2 drops of lemon juice into a deep saucepan. Without stirring the dissolving sugar, swirl the pan occasionally to help the sugar caramelize evenly. Once the sugar mixture turns a milky-toffee color, add 1 tablespoon of cold butter and stir with a wooden spoon. Add half a package of heavy cream to the deepened-color caramel still cooking on low heat, and stir quickly. Cook the caramel mixture for another 2–3 minutes on low heat, then remove from the stove. Pour immediately into a glass or ceramic container and let it rest for 3–4 minutes. Drizzle the prepared caramel sauce over the cooled pears and serve cold.
