- 1 sheet yufka (thin Turkish phyllo-like dough)
- 1 egg yolk
How to Make Crispy Spinach Börek (Turkish Savory Pastry)
- Clean, wash, and chop 1 kg (about 2 lb) of spinach. In a pot, sauté 1 finely diced onion in ½ tea glass (about 50 ml / 3 tbsp) of vegetable oil. Add the chopped spinach. Stir in 1 teaspoon of red pepper flakes, 1 teaspoon of black pepper, and ½ dessert spoon (about 1 tsp) of salt, and mix well. Once the spinach has wilted, crack 2 eggs over it, stir, and remove from heat once cooked.
- Lay 1 sheet of yufka (thin Turkish phyllo-like dough) flat on the counter. Cut it into long strips about four fingers wide. Place some of the prepared spinach filling at one end and roll up. Arrange on a baking tray lined with parchment paper, brush the tops with egg yolk, and bake in the oven at 190°C (375°F) until golden brown on top.
