Ingredients for Crispy Börek (Savory Layered Pastry) with Lor Cheese and Dill
- 2 sheets yufka (thin Turkish phyllo-like dough)
- 200 g lor cheese (Turkish curd cheese, similar to ricotta)
- 1 bunch dill
- ½ tea glass vegetable oil (about 50 ml / 3 tbsp + 1 tsp)
- 1 egg yolk
How to Make Crispy Börek (Savory Layered Pastry) with Lor Cheese and Dill
- In a bowl, mix 200 g of lor cheese with 1 bunch of washed and finely chopped dill.
- Pour half a tea glass of vegetable oil into a small bowl.
- Lay 1 sheet of yufka on your work surface and brush it all over with vegetable oil. Place the second sheet of yufka on top and brush it with oil as well. Cut the stacked sheets into 8 triangular pieces. Place a small amount of the lor cheese filling at the wide end of each triangle and roll up tightly into thin cigar-shaped rolls, like sigara böreği (cigar-shaped fried pastry rolls). Arrange them on a parchment-lined baking tray, brush the tops with 1 egg yolk, and bake in a preheated oven at 190°C (375°F) until golden and crispy.
