Ingredients for Kalburabastı (Turkish Semolina Cookies)
- 3 eggs
- 1 packet baking powder
- 1 packet vanilla
- 3 tablespoons vegetable margarine
- 3 tablespoons granulated sugar
- 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) semolina
- 3 tablespoons crushed hazelnuts
- Flour, as much as needed
How to Make Kalburabastı (Turkish Semolina Cookies)
Crack 2 eggs and 1 egg (white separated) into a bowl. Add 1 packet of baking powder, 1 packet of vanilla, 3 tablespoons of vegetable margarine, 3 tablespoons of granulated sugar, 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) of semolina, 3 tablespoons of crushed hazelnuts, and flour as needed. Knead everything together. Take about half a handful of dough and roll it into a ball. Press the rolled dough firmly against the coarse side of a grater and gently roll it back up to form a log shape. Carefully brush the reserved egg white over each piece one by one without disturbing their shape.
Bake on an ungreased pan without parchment paper in an oven preheated to 200°C (390°F) until the tops are golden brown. Meanwhile, bring 3 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) of granulated sugar, 4 water glasses of water, and 3 drops of lemon juice to a boil in a saucepan. Once the cookies have cooled, pour this prepared sugar syrup over them. Enjoy!
