Ingredients for Semolina Halva (İrmik Helvası)

  • 4 water glasses (about 200 ml / 3/4 cup + 1 tbsp each) granulated sugar
  • 4 water glasses water
  • 1 package vegetable margarine
  • 3 water glasses semolina
  • 1 package pine nuts

How to Make Semolina Halva (İrmik Helvası)

For the syrup: Add 4 water glasses of granulated sugar and 4 water glasses of water to a saucepan and stir until the sugar dissolves. (You can also use 2 glasses of water and 2 glasses of milk instead.)

Place 1 package of vegetable margarine in a saucepan. Once it begins to melt, add 3 water glasses of semolina and 1 package of pine nuts, and sauté until the color deepens. Slowly pour the prepared syrup into the semolina pot while stirring. Reduce the heat, cover with a lid, and remove from the stove once all the liquid is absorbed. After waiting 15–20 minutes, stir the halva, transfer it to a glass dish, sprinkle walnuts on top, and serve.

About This Recipe

Semolina is a coarse-ground flour made from durum wheat.

Semolina is rich in iron, a mineral that is especially important for people who experience anemia. Thanks to its iron content, hemoglobin — which carries oxygen in the blood — functions more efficiently. This coarse flour is also highly beneficial for heart and kidney health. The potassium found in semolina helps maintain the electrolytes that are essential for the heart and kidneys at adequate levels and ratios. Semolina is also high in carbohydrates, which is particularly important for those who engage in regular physical activity. People on a diet also prefer semolina because, as a fiber-rich food, it promotes a feeling of fullness. Semolina is also known to aid digestion. In addition to all of these benefits, it helps regulate and balance blood sugar, provides energy, and is rich in vitamins E and B — all of which contribute to overall human health.
