About This Recipe
Leeks began to spread through European cuisines during the Middle Ages. It is believed that they were brought to Turkish lands by immigrants, particularly Albanians. In fact, because Albanians use leeks so frequently in their cooking today, leeks are known as "the Albanian vegetable." During the growing stage, both the root and the stem develop underground, while the green leaves grow above ground in ribbon-like strips. In the first year of planting, it produces its bulb. By the end of the following year, it draws attention with stalks that reach nearly 1 meter (about 3 ft) in height. Despite having many varieties and being widely cultivated in our country, the most commonly preferred variety is known as the kartal (eagle) leek.
