- 300 g (about 10.5 oz) ground beef
- 1 tablespoon red pepper paste (biber salçası)
- 1 tablespoon grape vinegar
- 2 sugar cubes
- 1.5 tea glasses (about 150 ml / 2/3 cup) vegetable oil
- 1 dessert spoon + 1 teaspoon black pepper
- Half a tea glass (about 50 ml / 3.5 tbsp) water
- 3 slices of bread (inner crumb only)
- 1 onion
- 1 clove of garlic
- 1 dessert spoon baking soda
- 1 dessert spoon salt
How to Make Sultanahmet Köfte (Turkish Meatballs)
Pepper Paste Sauce
In a small saucepan, combine 1 tablespoon red pepper paste (biber salçası), 1 tablespoon grape vinegar, 2 sugar cubes, 1 tea glass (about 100 ml / 1/3 cup + 1 tbsp) vegetable oil, 1 dessert spoon black pepper, 1 teaspoon salt (if your pepper paste is unsalted), 1 dessert spoon Aleppo pepper flakes (if your red pepper is not hot), and half a tea glass (about 50 ml / 3.5 tbsp) water. Mash the paste into the liquid and bring to a boil. Remove from heat.
Köfte (Turkish Meatballs)
In a bowl, combine 300 g (about 10.5 oz) ground beef, 3 slices of soaked bread crumb, 1 grated onion, 1 crushed clove of garlic, 1 dessert spoon baking soda, half a tea glass (about 50 ml / 3.5 tbsp) vegetable oil, 1 teaspoon black pepper, and 1 dessert spoon salt. Knead the mixture together. Take small portions in your hand, shape them into long finger shapes, and fry in hot oil. Serve with the prepared pepper paste sauce. Enjoy!
