  • 1 onion
  • 500 g (about 1 lb) spinach
  • 1 teaspoon salt
  • 1/2 teaspoon Aleppo pepper flakes
  • 1/2 teaspoon black pepper
  • 3.5 water glasses (about 2 3/4 cups) flour
  • 1/2 water glass (about 1/3 cup + 2 tbsp) water
  • 1/2 water glass (about 1/3 cup + 2 tbsp) vegetable oil
  • 1 dessert spoon (about 2 tsp) salt
  • Butter for the top

How to Make Spinach Gözleme (Turkish Stuffed Flatbread)

Sauté 1 finely diced onion in a pan with vegetable oil. Add 500 g (about 1 lb) of washed and chopped spinach. Add 1 teaspoon of salt, 1/2 teaspoon of Aleppo pepper flakes, and 1/2 teaspoon of black pepper, stir, and remove from heat.

In a bowl, knead together 3.5 water glasses (about 2 3/4 cups) of flour, 1/2 water glass (about 1/3 cup + 2 tbsp) of water, 1/2 water glass (about 1/3 cup + 2 tbsp) of vegetable oil, and 1 dessert spoon (about 2 tsp) of salt. (If the dough sticks to your hands, add a little more flour.) On a floured surface, shape the kneaded dough into a log. Cut the dough into four finger-width pieces. Roll each piece into a ball and use a rolling pin to roll it out to the size of a serving plate. Place some of the prepared spinach filling onto each rolled-out piece of dough, fold it over, and press the edges shut. Cook on a dry non-stick pan over low heat, flipping to cook both sides. Once cooked, spread butter on top. Enjoy!
