About This Recipe

Samphire is rich in minerals, particularly sodium, iodine, magnesium, iron, vitamins A, B12, and C, as well as fiber. Because it grows in saltwater, it contains the purest form of all these minerals. It is also ranked among the top foods in the category of medically beneficial nutrients. Sea samphire alone could feed millions of people, yet unfortunately its full potential has still not been realized.

Its benefits to the human body are numerous. The zinc found in samphire makes a great contribution to fetal development during pregnancy. It strengthens the immune system.
When applied externally, it relieves pain and heals burns. When consumed during menstruation, it helps prevent anemia. It supports cell renewal and the repair of cell damage. Being rich in fiber, it is friendly to the digestive system. It lowers bad cholesterol. It balances blood sugar. It helps dissolve bladder stones. It helps the body shed excess fat. It reduces swelling in the feet.

Every year as we prepare for winter, most of us get ready Winter-Preserved Peas, Winter-Preserved Green Beans, or Winter-Preserved Okra. Today's recipe is Winter-Preserved Samphire. Enjoy making it…
