- 1 kg (about 2 lb) okra
- 3 tomatoes
- Half a lemon
- Freezer bag
How to Make Winter-Preserved Okra
Wash and trim 1 kg (about 2 lb) of okra. Drain in a colander. Peel 2 tomatoes and dice them into the bottom of a freezer bag. Place the okra on top. Drizzle with the juice of half a lemon. Peel and add the remaining 1 tomato on top. Seal the bag and turn it upside down a few times with your hands (to distribute the lemon juice). Place in the freezer. (You can do this with half a kilo or more.)
