About This Recipe

Cheese production dates back far before recorded history — all the way to around 8000 BC, coinciding with the domestication of sheep. It is believed that the first cheese was made by the people of the Middle East and the nomadic Turks of Central Asia. In those times, animal hides and internal organs were used to store food. The leading theory is that milk stored in animal stomachs (tripe) fermented due to the enzymes and cultures present there, turning into curd — and that this is how the first cheese came to be.

The earliest written record about cheesemaking dates to around 2000 BC, found in tomb inscriptions in Egypt. Because cheeses made in ancient times were sour and salty, they are thought to have resembled today's white cheese and feta cheese. European cheesemaking uses less salt due to the climate. Since a greater variety of beneficial microbes and enzymes can thrive in a less salty environment, these cheeses develop distinct and interesting flavors.

The most widely consumed cheeses in our country are white cheese, followed by kaşar cheese (Turkish semi-hard cheese, similar to mild cheddar) and rind cheese. There is also considerable variety in regional cheeses. Cream cheese, Kars kaşar, Tunceli tulum cheese (aged Turkish cheese), Posof çeçil cheese, Kelle cheese (Mihaliç), Moldy Ardahan rind cheese and çökelek, Goat cheese, Ezine cheese (regional white cheese), Erzincan tulum cheese, İzmir tulum cheese, Van herb cheese, Lor Urfa white cheese, Circassian cheese, Hellim Abaza cheese, Civil (string) cheese, Dil cheese, Maraş cheese, Çökelek, Yozgat çanak cheese, Külek cheese, Örgü (braided) cheese, Çeçil cheese, Golot cheese, Hatay cara cheese, İstanbul meadow cheese, Manisa meadow cheese, Kars gruyère cheese, Ordu bag cheese, Giresun imansız cheese, Denizli Yörük cheese, Karaman tuluk cheese, Küp cheese, and Roquefort cheese are among the best-known varieties.
