About This Recipe
Pepper, which originates from South America, is also the oldest vegetable cultivated in the Americas, and it is known to have spread across the world after the discovery of the American continent. It belongs to the nightshade family and is among the vegetables with the most varieties — over 700 species exist. It is known that wild pepper varieties were consumed by the indigenous peoples of America around 7500 BC, and that pepper cultivation was practiced between 5200–3400 BC. Research indicates that the Aztecs and Mayans had a habit of eating pepper alongside virtually everything they ate.

The alkaloids that give pepper its heat are specifically capsaicin and dihydrocapsaicin. The degree of spiciness is determined by the concentration of capsaicin, the compound responsible for the hot sensation. The compounds that give pepper its heat dissolve more easily in fat and alcohol than in water — so when your mouth is burning from pepper, drinking yogurt or milk will relieve the heat much faster than drinking water.
