- 1 kg (about 2 lb) black mulberries
- 1 kg (about 2 lb) granulated sugar
- Juice of 1 lemon
How to Make Black Mulberry Jam (Karadut Reçeli)
Remove the stems from 1 kg (about 2 lb) of black mulberries and wash them. Place in a pot. Add 1 kg (about 2 lb) of granulated sugar on top and, once the mixture begins to boil, stir occasionally and reduce the heat. If foam forms on the surface while cooking, skim it off with a spoon and discard. Once the liquid starts to thicken, add the juice of 1 lemon, bring to one final boil, then turn off the heat. If the jam liquid does not run off your fingernail, it is done.

The black mulberry belongs to the genus Morus, a member of the Moraceae family with approximately 100 species. Although the mulberry fruit has long been promoted as originating from Iran, research actually points to several different regions as its true homeland. These include Anatolia — which encompasses our own country — as well as China and India in the Far East, the southern parts of Russia in the North, and Middle Eastern countries. Although the mulberry tree favors subtropical and temperate climates, it is also cultivated in provinces with very different climates across Turkey, such as Kahramanmaraş, Erzurum, Ankara, Ordu, and Malatya.
Black mulberries are harvested in July and August. The fruit is approximately 2.5 cm in size. The height of the black mulberry tree varies between 3 and 15 meters depending on the variety. Black mulberries contain calcium above all, as well as iron and vitamins B1, B2, and C.
