Ingredients for Aşure (Turkish Noah's Pudding)
- 500 g (about 1 lb) wheat berries
- 1.5 water glasses (about 300 ml / 1¼ cups) dried white beans
- 2 water glasses (about 400 ml / 1¾ cups) chickpeas
- 15 dried apricots
- 1.5 water glasses (about 300 ml / 1¼ cups) rice
- 1 packet golden raisins
- 1 dessert spoon (about 2 tsp) salt
- 2.5 kg (about 5.5 lb) granulated sugar
- 4 whole cloves
- 10 dried figs
- Pomegranate seeds, for topping
How to Make Aşure (Turkish Noah's Pudding)
The night before, rinse 500 g of wheat berries and 1.5 water glasses of dried white beans and soak them in water. The next morning, rinse them again, fill the pot with water to the brim, and bring to a boil. Reduce the heat and let them cook through, then add 2 water glasses of chickpeas that you have boiled separately. Cook a little longer, then add 15 chopped dried apricots, 1.5 water glasses of washed rice, 1 packet of golden raisins, and 1 dessert spoon of salt. Once cooked, stir in 2.5 kg of granulated sugar and 4 whole cloves. When it comes back to a boil, add 10 figs that you have chopped and soaked on the side, and cook for a further 15 minutes. (Remove the seeds from the figs.) Serve topped with walnuts and pomegranate seeds.

Aşure (Turkish Noah's Pudding) is a dessert traditionally prepared on the tenth day of the month of Muharrem according to the Hijri calendar. Its name comes from the Arabic word عَشْرَة (āšūrā), meaning "tenth." According to Islamic belief, on the tenth day of Muharrem, the Prophet Noah made this dessert from the last remaining ingredients he had on hand after the Great Flood when he set foot on dry land.
