- 1/2 tea glass (about 50 ml) vegetable oil
- Köfte
- 200 g (about 7 oz) ground meat
- 1 onion
- 1 handful chopped parsley
- 2 slices bread (crumb only, soaked and squeezed)
- 1 egg
- 1/2 dessert spoon (about 1 tsp) salt
- 1/2 teaspoon black pepper
- 12 sheets puff pastry
- 1 egg yolk
- Serving
- Garlic yogurt
How to Make Köfte (Turkish Meatballs) in Puff Pastry
In a small saucepan, cook 1.5 tablespoons of salça (Turkish tomato/pepper paste), 1 sugar cube, 1 teaspoon of Aleppo pepper flakes, 1 teaspoon of salt, 1 water glass (about 200 ml / 3/4 cup + 1 tbsp) of water, and 1/2 tea glass of vegetable oil together until the sauce comes together.
In a bowl, knead together 200 g (about 7 oz) ground meat, 1 grated onion, 1 handful of chopped parsley, 2 slices of soaked and squeezed bread crumb, 1 egg, 1/2 dessert spoon of salt, and 1/2 teaspoon of black pepper. Shape into 6 large round köfte.
Arrange 6 puff pastry sheets on a baking tray lined with parchment paper. Whisk the yolk of 1 egg and brush it onto the edges of these pastry sheets. Take the remaining 6 puff pastry sheets, leave a two-finger border around the edges, and cut a square opening in the center of each; place these on top of the pastry sheets on the tray. Place the prepared köfte on top. Brush the remaining egg yolk over the pastry tops. Bake in a preheated oven at 190°C (375°F) until the köfte and pastry are golden brown. Serve with garlic yogurt and the prepared tomato sauce. Enjoy!
