On Day 16, we break our fast with a comforting Tarhana Soup (tarhana çorbası) — a hearty, homemade-style soup made from tarhana (fermented grain-yogurt soup base) that feels like it came straight from a mother's kitchen. For the first day of the week, we've built the iftar menu around a wonderful and elegant İslim Kebabı. Of course, alongside a köfte (Turkish meatballs)-based kebab, we fill our plates with the essential and impressive Garnished Pilaf.
